The Goan Food Festival at Novotel Pune, curated by the talented Chef Henzil Saldanha and his exceptional team, was a vibrant culinary odyssey.


From the moment I stepped in, I was transported to the heart of Goa—its coastal charm, lively spirit, and bold flavours reflected in every dish.

The atmosphere set the perfect tone. Novotel Pune's dining room had been transformed into a coastal haven, with breezy, beachside elegance and subtle décor nodding to Goa's serene shores. Soft lighting added warmth, while the gentle hum of contented diners and the harmonious melodies of Goan musicians Felicia and Francisco heightened the experience.

Goan food has always held a special place in my heart, and this festival was a pure celebration of the cuisine's authenticity. The mastery with which Chef Henzil and his team brought these flavours to life left a lasting impression, a testament to their dedication to crafting an experience that goes beyond just a meal.


The starters set the stage beautifully. The ‘Sopa Grossa’ was a thick, comforting broth that enveloped the palate in warmth. Each spoonful carried the essence of slow-cooked vegetables, delicately spiced to let the richness of the ingredients shine through. The gentle heat lingered pleasantly, making it the perfect start.

Then came the ‘Croquette de Galinha’, a crisp, golden shell yielding to a creamy, savoury chicken filling. The peppery undertones cut through the richness, adding layers of warmth and a burst of flavour that was both subtle and satisfying. Every bite delivered the contrast of crunch and softness, heightened by the delicate spicing that brought out the best in the tender chicken.


The ‘Cutlet de Camarao’ followed, a perfectly crisp bite that offered the sweet brininess of shrimp. The crust was light yet crunchy, and the shrimp inside was tender and flavourful, teasing the palate with a delicate sweetness that was balanced by a subtle spicing—each bite was a little taste of the sea, enveloped in a golden shell.


Moving on to the other item, the ‘Forminhas’ were a revelation. The pastry was impeccably flaky, providing a crisp contrast to the richly seasoned filling inside. The flavours danced between savoury and mildly spiced, with the pastry melting away to reveal the hearty and satisfying interior—a true homage to Goan culinary tradition.

The ‘Recheado de Peix’ brought an explosion of flavour with its fiery red masala. The fish was succulent and flaky, but it was the masala that stole the show—a vibrant, spicy blend that packed a punch and lingered long after the bite. The heat was intense but balanced, allowing the tang of vinegar and the earthiness of spices to shine through, creating an unforgettable experience on the palate.


Then came the ‘Cafreal de Frango’, with its green curry marinade that infused the grilled chicken with fresh, vibrant flavours. The zesty kick of coriander and mint played beautifully with the char of the grill, creating a dish that was both herbaceous and smoky, with layers of complexity that unfolded with every bite.


The ‘Nisteache Kodi’ was the ultimate comfort dish. The coconut curry was silky and rich, enveloping the tender fish in a luxurious sauce that had the perfect balance of sweetness and spice. The coconut’s natural sweetness paired with the mild heat from the curry created a dish that was soothing and indulgent, yet light enough to keep you coming back for more.


The ‘Vindaloo de Porco’ was a bold offering. The pork was tender, the spicy red masala intensely flavourful, and the sharp tang of vinegar cut through the richness with precision. It was a dish that delivered heat in waves, but the vinegar tempered the fire, creating a mouth-watering balance that kept the dish from becoming overwhelming.

Finally, the ‘Carne Frita Fria’ was an exquisite finish to the savoury courses. The meat was tender, infused with bold, fiery flavours of garlic and chillies. The cold preparation brought a unique twist, with the flavours deepened by the cooling process, making each bite rich, spicy, and full of character—a fitting end to a savoury journey.


This carefully curated tasting showcased the nuanced flavours of Goan cuisine, where tradition meets taste in every dish.


Each dish was a harmonious blend of tradition and innovation, balancing rustic Goan roots with modern culinary artistry. The symphony of Goan spices especially brought from Goa, coconut creaminess, and tangy kokum created a dance of flavours across the meal. The balance of textures—crispy exteriors and flaky interiors—kept my palate intrigued and satisfied.

To finish, the desserts offered a perfect finale. The ‘Bebinca’ was an exquisite layered creation, its rich coconut flavour gradually deepening with each tender bite. The caramelized edges added a delightful contrast, providing a slightly crisp exterior to the soft, custard-like layers. Each forkful felt indulgent yet balanced, with the sweetness never overpowering, but rather inviting you to savour the coconut richness.


The ‘Dodol’ was a denser delight, chewy and rustic, with the deep, earthy flavours of coconut and jaggery creating a robust sweetness. Its texture was satisfyingly sticky, offering a slow release of flavour that grounded the senses in the comfort of traditional Goan sweets, rich in history and warmth.


Finally, the ‘Perad’ delivered a tropical flourish to the end of the meal. This guava cheese was sweet and tangy, its vibrant flavour cutting through the richness of the previous desserts. The chewiness was reminiscent of a firm jelly, providing a light, fruity conclusion that left the palate refreshed and thoroughly satisfied. Each dessert was a fitting tribute to Goa’s sweet culinary heritage, rounding out the meal with elegance and depth.


I must say that Chef Henzil’s remarkable skills were evident throughout. His mastery of traditional Goan techniques combined with modern presentation and flavour made every dish stand out. His respect for Goan heritage shone through, yet each dish had a creative touch that elevated it to something truly exceptional.

The dedication of Chef Henzil’s team @ Novotel was equally impressive. Their precision, passion, and attention to detail were reflected in every bite, making this more than just a festival—it was a labour of love. The seamless execution, from kitchen to table, demonstrated their expertise and commitment to excellence.


The F&B service team at Novotel Pune truly set a remarkable standard. Their attentiveness went beyond mere service; it was a seamless blend of expertise and genuine care that enhanced the entire dining experience. Each staff member was exceptionally knowledgeable, not only about the menu but also about the finer details of the dishes, providing insightful recommendations and thoughtful explanations.

Their professionalism was evident in every interaction—whether it was refilling glasses with a timely grace, addressing inquiries with a warm smile, or offering personalized suggestions that perfectly complemented the meal.
